In NE Texas we often refer to Yellow Squash as Summer Squash.  I really never cared for it until my wife taught me this simple recipe that provides for a delicious side dish. 

Whether you’re grilling, sauteing, baking, or even roasting your yellow squash this summer, getting these veggies into your diet will improve your health. Not only are they low-calorie, but they’re full of fiber and essential vitamins and minerals that are known to protect the body from disease. So put down those french fries and pick up some fresh yellow squash instead!

Ingredients
  • 1 each yellow squash (medium size 8.75 oz. (248g))
  • 1 1/2 tablespoon light butter with canola oil (Land O Lakes brand)
  • 1/2 teaspoon garlic powder
  • 2 tablespoons cheese (Italian blend, shredded)
  • 1 dash ground black pepper (to taste)
Instructions
  1. Preheat oven to 400°F.  Assemble the ingredients. Wash the squash and place it on a carving board. Remove about a half inch from each end and then slice it lengthwise down the middle keeping each side about the same thickness.

  3. Bake for 25-30 minutes until the cheese is slightly brown and a fork indicates the meat is soft. Serve hot.

1 Tbsp of grated Parmesan or Grana Padano cheese is 5.62 grams.  Since this recipe calls for 2 Tbsp, the total used is 11.24 grams.  Since we know that there are 40 kcals in 10 grams of Grana Padano, I think we can safely assume there are approx. 43 kcals in this recipe.
