In NE Texas we often refer to Yellow Squash as Summer Squash. I really never cared for it until my wife taught me this simple recipe that provides for a delicious side dish. It is rich in fiber and very low cal and low fat.
Step by step method

Preheat oven to 400 F. Assemble the ingredients. Wash the squash and place it on a carving board. Remove about a half inch from each end and then slice it lengthwise down the middle keeping each side about the same thickness.

Holding each piece in your hand, lightly spread the butter over the piece using a dinner knife. Place the buttered pieces on a foil-lined baking pan or in a glass baking dish. Lightly sprinkle with the garlic powder and then top each piece with the grated cheese. Pepper to taste.

Bake for 25-30 minutes until the cheese is slightly brown and a fork indicates the meat is soft. Serve hot.
