“Bean there, done that!”

I know that I already have a similar recipe posted which is Bacon Wrapped Green Bean Bundles.  If you will study the ingredients for both, you will see that the big difference is sweetness as the other recipe has ¾ cup of brown sugar in it.  We are trying to cut back on sugar grams so this newer recipe is our new choice; it is also low-calorie and low-carb.

When making this recipe, keep in mind that there are three things that really make it pop.  First, make sure the beans are blanched until they are crisp tender … this usually takes 4 to 5 minutes.  Second, use quality balsamic vinegar that is thick and rich.  And last, use packaged, fully cooked bacon so that the bundles appear browned and crisp when plated.

    Assemble the necessary ingredients and preheat the oven to 375°F and place a wire rack on top of a baking sheet.

    Bring a pot of water to a boil. Add in the beans and blanch them for 4-5 minutes until they are crisp tender. Remove them from the pot and run them under cold water.

    Place the cooled green beans in a bowl. Toss them with olive oil, salt, pepper, balsamic vinegar and garlic.

    Assemble the green beans into bundles of 8-10 and wrap each bundle tightly with 1 strip of bacon securing it with a toothpick.

    Place the wrapped bundles on the wire rack. Brush any excess oil from the bottom of the bowl over the bacon.

    Roast the bundles in the oven for 20-22 minutes until the bacon is crisp and the ends of the beans are beginning to brown.

    Using tongs, remove from the wire rack and serve hot on the plate!
