Someone once said, “Boredom always precedes a period of great creativity.” At least for me, the great pandemic shut-in of 2020 is the epitome of boredom and I’m doing my best to keep it in check by trying new recipes while cooped up in the house for weeks on end. This is by no means a “new” recipe since I’ve found it online in numerous places. The earliest posting appears to be from Sept 2008 on a blog named At Home In Alaska authored by “alskamom” which sadly appears to now be dormant although it remains accessible online. Maybe this doesn’t quite qualify as “great creativity” but it is still a fantastic, yet simple, delicious dessert and I am thrilled to have found it!
One of the interesting things about this recipe is steps 2 and 3 in the instructions. I had never used this technique of pouring the batter into a dish of melted butter and then topping that with the main ingredient (i.e. banana) all without stirring the mixture. Now I've run across five or six recipes that use the same technique.
Preheat oven to 350°F.
Pour melted butter into an 8-inch baking dish. Mix the next five ingredients in a bowl. Pour mixture over the melted butter. (melted butter will rise to the top).
Slice bananas into 1/4 to 3/8-inch medallions and drop them into the batter. Do not stir! Bake 40-45 minutes until top is brown. Remove from oven and allow dish to rest on the stovetop for about 10 to 15. It will firm up during the rest.
Serve warm. Sprinkle with cinnamon sugar or powdered sugar. If desired, top with a scoop of ice cream.
