This is a quick, simple recipe providing delicious results. I came across it at www.ThatsMyHome.com. I modified it by taking it off the grill and putting it in the broiler (but you can still grill it if you prefer). Since we are now empty-nesters (thank you God), I usually cut the recipe in half for just my wife and I.
In a small saucepan over high heat, reduce the sherry to 1/4 cup. In a mixing bowl, combine the sherry syrup with the mustard, honey, and ancho chile powder and season to taste with salt and pepper. Let rest 30 minutes. Preheat the broiler. Brush the salmon with the glaze and broil about 5 minutes .. pull the pan out and brush with the glaze again .. return to the broiler for at least another 5 minutes or until the meat flakes with a fork. Pour any remaining glaze over the fillets and serve.
