My wife, Karen, published this in the Koenig Family Cookbook many years ago. It is a favorite at our table.
Beat Eggs and mix them with the Soy Sauce, Sherry, Ginger and Garlic Powder together in a prep tray or pie plate. Sprinkle Bread Crumbs on a sheet of wax paper or a second prep tray. Dip the Chops into the Egg mixture, then press into Bread Crumbs, coating evenly on both sides. Arrange in single layer in baking pan or dish. Bake for 30 minutes then turn and bake 20 minutes longer or until Chops are tender and show no pink.
