Peanut Bisque

Undoubtedly, my favorite culinary memory of the 1980’s was Bob Daniel’s Peanut Bisque at the famous Durham House in Waxahachie, Texas.  The restaurant was located in an old Victorian house near the downtown area and I remember having to make reservations over a month in advance for each visit, and even then having to park a block away because limousines from Dallas lined both sides of the street.  Other than creamy tomato when I was home sick, I never cared much for soup … however, since peanut butter has always been a mainstay, it was easy to fall in love with Peanut Bisque.  I hope you enjoy it as much as I do!

  1. Using a large, deep saucepan, sauté the celery and onion in the butter until tender.  Transfer to a blender and puree.

  2. Return the pureed mixture to the saucepan.  Over medium heat, add the flour while stirring constantly with a whisk until well blended.

  3. Increase the heat to medium high and gradually add the chicken stock while whisking constantly.  Bring mixture to a low boil as it thickens.

  4. While continuing to whisk, add the remaining ingredients except the cream. 

  5. Once the mixture is well blended and there are no lumps from the peanut butter, remove from heat and add the cream.  Return to heat and bring to serving temperature but below boiling.  Whisk for several more minutes.  Sprinkle with fresh chopped chives for serving.

NONNUTRITIOUS APPRISAL ... This, in my humble opinion, is one of those dishes that goes beyond delicious and even surpasses scrumptious.  Unfortunately, when something is that good, we typically find something "not good" as Adam and Eve discovered with the proverbial apple! The "not good" in this dish is: (1) calories per serving, (2) calories from fat, (3) total fat, (4) saturated fat ... I won't list cholesterol, sodium, and sugars because their levels are only borderline.

I truly hope you will try this dish and, when you do I know you will enjoy it as much as I do ... just don't over-indulge!
