Red Velvet Cake has been around for a long time so I guess that applies also to Red Velvet Cookies as well as Red Velvet Cupcakes and Red Velvet Brownies … regardless, all four have long been on my list of favorites. This easy-to-make recipe is perfect for youngsters and beginner bakers.
Preheat oven to 350°F. Line two large baking sheets with parchment paper or silicone baking mats and set aside.
In a large mixing bowl, add the cake mix, oil, vanilla and eggs and mix until fully combined (Batter will be thick). Add in the white chocolate chips and fold into the dough until well combined. Cover the bowl with plastic wrap and refrigerate the dough for 45 minutes.
Scoop 2-tablespoon sized balls of cookie dough onto the prepared baking sheets, making sure to leave about two inches between each one.
Slightly flatten each cookie with a cup or your fingers. You can make them as thin as you want.
Bake at 350°F for 10-12 minutes or until the tops of the cookies are set. Remove from the oven and allow the cookies to cool for 5-10 minutes on the baking sheet, then transfer them to a wire rack to finish cooling.
