My newly adopted healthy eating lifestyle means a drastic cutback on carbs so anytime I can eliminate bread from an existing recipe/dish, I do so. This recipe is a simple alteration of Roseville Tomato Pie (which is published on this site) in which I’ve removed the biscuits and changed to healthier ingredients. As long as you can find decent tomatoes in the grocery store, this will provide you with an ideal side to almost any meal.

Step by step method

  • Heat oven to 400 F. Slice the tomatoes in 1/4" slices and place on paper towels to drain. In a small bowl, mix the cheese with the mayo and Salad Supreme seasoning. Place the tomato slices in a foil lined baking pan and spread a thin layer of the mayo mixture on each slice using a dinner knife. Sprinkle a small amount of the grated Parmesan on each tomato slice and place the pan in the oven. Bake for 12 to 15 minutes until the cheese begins to brown. Remove and serve hot.
