Spicy Cajun Comeback Sauce

This according to Google, “Comeback sauce is a classic Southern sauce that originated in Jackson, Mississippi. Originally, it was the house dressing served at the Greek restaurant, The Rotisserie, and today you’ll find it on many Mississippi restaurant menus. The name comes from the traditional goodbye in Mississippi.” Personally, I would amend that to say it is not unique to just Mississippi, but to the entire old south … it was a regular line on HEE HAW and even Ellie Mae Clampett says it at the end of the end credits of “The Beverly Hillbillies.”

I know, I have wandered away from food so let’s go back. I live on the Texas – Louisiana border and I can’t recall being in too many Louisiana restaurants that didn’t have their own Comeback Sauce and most of those were named “Cajun Comeback Sauce.” This particular recipe is provided by Blue Plate Mayonnaise along with dozens of outstanding Cajun/Creole recipes on their website at BluePlateMayo.com/recipes/.

This comeback sauce can be enjoyed on dozens and dozens of dishes such as: sandwiches, burgers, tacos, fries, onion rings, shrimp, chips, chicken nuggets, fried okra, hush puppies, oysters, as a dip, as a condiment spread, as a salad dressing and the list just keeps going on and on and on ….

  1. Combine all the ingredients in a bowl.

  2. Whisk vigorously for several minutes to insure the sauce is smooth and mixed well.

  3. Transfer to a resealable container and refrigerate or a least one hour before serving.  Sauce can be stored in an air-tight container in the refrigerator for up to 2 weeks.
