Since today is Cinco de Mayo, I thought it was the ideal time to post the first “taco salad” recipe on the website. My wife and I have been enjoying this salad about once a week for well over a year because it is healthy, low calorie and low carb. In addition to the healthy stuff, it is a delicious and filling meal. Please, give it try and it may add a few days or more to your life!
Step by step method
Assemble the ingredients and brown the ground meat in a non-stick skillet.
In a 1-qt bowl, fill almost halfway with chopped lettuce. Top the lettuce with chopped tomatoes & avocado. Add a little grated cheese and top that off with the salad dressing of your choice (mine's Ranch Lite)
Now top the lettuce mixture with 5-6 oz. of browned ground meat flavored with the taco seasoning. Top the meat with some sour cream, salsa and a little more grated cheese. Now you are almost ready to dig in ... just gently toss the salad using two forks and start eating!
