“Nothing says, ‘I love you,’ better than a pizza!”
Our grandchildren are coming for a visit next month so I am picking out recipes I think they’ll enjoy … both preparing and eating! This recipe was adapted from a similar one on HealthyFitnessMeals.com.
Step by step method
Assemble the ingredients. Preheat oven to 400-degrees F and line a shallow baking pan with non-stick aluminum foil.
On a cutting board, slice the zucchini into 1/2" thick medallions.
Arrange the medallions on baking pan and top with the pizza sauce.
Now add cheese to each medallion and top that with the mini pepperoni slices.
Bake in the oven (on the middle rack) for 12 minutes, or until the cheese is melted and bubbly. It will be very hot so let it cool for about 10 minutes before eating.
