- 1 cup plus 2 T sugar, plus an extra 1/4 cup for sprinkling
- 1/2 cup low-fat buttermilk
- 2 large eggs
- 7 T unsalted butter, melted, plus 1 extra T for skillet
- 1 tsp vanilla extract
- 2 cups blueberries (fresh preferred, frozen is okay)
