Description

Our family friend, Sandra Herring, gave us this recipe after serving it at one of my wife’s girls’ getaways at the lake house. I hope Sandra won’t mind too much that I have altered it just a bit because that’s something I do with almost all recipes … mostly to drive Karen crazy!

I've been taking food to shut-ins for years and this dish is the most requested regardless of the time of year.  It is super easy to assemble and cooks quickly.  

This recipe is high protein, high fiber, low fat and low carb; in other words, it is just plain healthy and the perfect meal for youngsters as well as shut-ins.

Taco Soup

Ingredients
  • 1 pound turkey (ground, breast meat)
  • 1 1/2 ounce shallot (minced)
  • 1 can corn ((11 oz) white shoepeg, drained)
  • 1 can black beans ((15 oz) low sodium, drained, washed)
  • 1 can great northern beans ((15 oz) low sodium, drained, washed)
  • 2 cups chicken broth (low sodium)
  • 1 can tomatoes (petite diced, mexican style, low sodium)
  • 1 can tomatoes and chilis (Rotel (10 oz) no salt added)
  • 1 Ranch Dressing dry mix
  • 1 1/4 ounce Taco seasoning dry mix (Dash Salt-Free)
  • 1 teaspoon salt (Diamond Crystal Kosher salt)
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon Adobo Mexican seasoning
  • 1 tablespoon cilantro (dried (optional))
Instructions
  1. Assemble the ingredients and prepare required equipment and tools.

  2. In a skillet, cook/brown the ground meat with the shallot and drain

  3. Unless you prefer large chunky diced tomatoes, I suggest you slightly chop up the tomatoes in a blender (just a spin or two)

  4. Mix all the ingredients in a soup pot

  5. Bring to a boil and then simmer for 30 minutes

  6. Serve in soup bowls topped with a dollop of sour cream & sprinkled with shredded cheese.  Provide tortilla chips on the side. Optional toppings include fresh chopped Cilantro and/or Tabasco sauce to the individual's tastes.

Every time I cook this recipe it tastes better than the time before. Just recently I decided it was time to make modifications to cut the sodium content and it worked! In addition to moving the canned items over to "low sodium" or "no salt," I took a big chance and replaced the low-sodium taco mix to "Dash Salt-Free Taco Seasoning Mix" and the changeover could not have been more successful! You might have a hard time finding the Dash (formerly Mrs. Dash) brand but, trust me, it is out there. After trying all the major grocery store in a 50-mile radius with no luck, I finally ordered 4 packets from Amazon and the order was canceled after 3 weeks due to product unavailability. Two days later I found it on the shelves in my local Kroger grocery which did not have it earlier. Regardless, the taste it provides is perfect and I highly recommend the product.
