Baked Trout in Creamy Tuscan Garlic Sauce

Before some "wise guy" (pun intended) corrects me, let me clarify that there are Rainbow Trout in many northern Italian streams and rivers.  Granted, they were imported from the U.S. many years ago but they are now prolific.  The Brown Trout is native to Italy and is very similar in size and taste to the Rainbow Trout.

My earliest recollection of enjoying eating Rainbow Trout was in the late 1970’s at Lamb’s Grill in downtown Salt Lake City. For breakfast I ordered Rainbow Trout topped with bacon & eggs; it was almost a religious experience!

The flavor of rainbow trout is milder and more delicate than salmon and other species. Besides, the flesh is flaky and soft.  Rainbow Trout is the sustainable, low mercury fish labeled a “best choice” by the EPA and FDA. This colorful patterned fish is a member of the salmon family and is one of the healthiest fishes you can include in your diet.

  1. First, prepare the fish fillets according to my recipe, Baked Rainbow Trout.  Once they are done, remove them, place them in a baking dish or shallow baking pan and remove to a warm place covered with aluminum foil.

  2. In a large sauté pan, add the olive oil and the minced garlic.  In a minute or two, when the garlic becomes fragrant, add the dry sherry and simmer for another 1 to 2 minutes.  Then add the table cream, chicken broth, garlic powder, Italian seasoning and grated Italian cheese.  Whisk in the cornstarch and simmer for another 1 to 2 minutes.

  3. Now add the chopped spinach and the capers.  Allow to simmer for several minutes until the spinach begins to wilt.  

  4. Add the quartered cherry tomatoes and simmer for another minute.  Last, add the trout fillets back to the pan and simmer for one more minute before removing from the heat and serving.

This recipe was inspired by "Insanely Good Creamy Tuscan Garlic Salmon" on The Recipe Critic website.  Since my family prefers trout over salmon I changed the recipe accordingly.  Since trout can be rather delicate and flaky, I decided to bake it rather than using the pan sear method.
