Buttery Garlic Sugar Snap Peas
This recipe was inspired by my earlier, Buttery Garlic Green Beans. I changed the way the peas are prepped and cooked and added a few taste-changing enhancements. The sweet taste of these peas has always appealed to me plus they are healthy being a source of vitamin C and vitamin K.
The sweetness of the peas is complemented perfectly by the garlic, parmesan and Cajun seasoning.

Using a large, high-sided skillet, melt the butter in the olive oil over medium high heat. Add the minced garlic and sauté for about a minute.

Add the sugar snap peas tossing them around in the pan to coat them with the butter mixture. Season with salt, pepper and Cajun seasoning and sauté until the peas are crisp, tender, about 5-7 minutes.

Transfer to a serving bowl; top with grated parmesan cheese and sliced almonds.

Note
If you want a little heat, you might consider adding 1/8 tsp of red pepper flakes.
The thin-sliced almonds can be substituted with slivered almonds or almost any nut that has been chopped small like chopped pecans. Have someone with a nut allergy? Instead of nuts, use toasted panko bread crumbs.
Any fresh grated hard Italian cheese can be used in place of the Parmesan ... I prefer Grana Padano but there's always Asiago, Pecorino Romano, or several others.
