“Winner winner chicken dinner!”
Creamy Paprika Chicken and Spinach
The quotation for this recipe, "Winner winner chicken dinner," is a phrase exclaimed to celebrate a victory, especially in gambling when someone hits the jackpot. Well, I feel like I hit the jackpot with this recipe because: first, it is delectable ... second, it is simple to prepare ... and, third, most importantly it versatile in that you can change out the proteins (i.e. replace chicken with pork chops or salmon fillets, etc.) and it remains incredibly delicious. Every once in awhile I hit the jackpot with a recipe that ends up becoming one of my "go to" recipes and this falls into that category so, Winner winner chicken dinner!
This recipe was inspired by Chicken and Spinach in Creamy Paprika Sauce written by Olya at Whatsinthepan.com. I changed one of her ingredients and added two others. Most importantly I shopped carefully for the ingredients and was able to decrease her original recipe's of 330 kcals per serving to my recipe's 272 kcals per serving.
I have now used this recipe as my platform to use pork chops, salmon fillets, and tilapia fillets. All provided successful results!

Season the chicken fillets with salt, pepper and paprika, rubbing it evenly over both sides.

Melt 2 tablespoons of butter in a large skillet over medium high heat and cook on each side for 3 minutes. Remove and set the meat aside on a separate plate.

Do not clean or empty the remains in the skillet. Melt 1 tablespoon of butter in the skillet and add the garlic cooking it stirring frequently for about 2 minutes. Add the sifted flour and whisk until well mixed. Add the dry sherry and simmer for 2 minutes.

Stir in the chicken broth, Mexican crema, lemon juice, dried shallot, and pepper flakes. Add salt and paprika. Whisk to mix well.

Add the chopped spinach, cover, and simmer an additional 2-3 minutes until the spinach has wilted.

Return the meat to the skillet and cook covered for 3 minutes if your cuts are thin or 5 minutes if they are thick.

Note
This recipe is so versatile. No spinach in the fridge... then feel free to substitute asparagus, broccoli, broccolini, sweet peas, or give it your best shot! Sauteed mushrooms and/or cherry tomatoes are always a welcome addition.
