Grilled Spinach Feta Burgers

When I transitioned to a healthier eating lifestyle last year, I figured I'd never touch a big, juicy hamburger with all the trimmings on a sesame seed bun.  Well, I haven't and probably won't but I have been able to enjoy several different types of healthy burgers made with real beef and this Grilled Spinach Feta Burger gets high marks from me!  I must clarify that I don't eat my burgers on a bun because I pick and choose my daily carbs carefully and a piece or two of bread rarely makes the list ... we'll talk about garlic bread later, lol.  Instead of buns, I prefer to attack my burger on a plate topped with such healthy fixins as lettuce, tomato, avocado and low-cal condiments.  Instead of chips or regular fries I might have roasted parmesan zucchini (or yellow squash) rounds or baked sweet potato fries.  I end up enjoying a great meal with less than 300 calories that won't hurt me on the scales .... think about it and give it a try!

  1. Assemble the ingredients.  Pre-heat your grill to about 450 °F and spray cooking oil on the grids.

  2. In a 2-qt bowl, add all the ingredients and use your hands to mix and combine them thoroughly.

  3. On wax paper, use your hands to form four approx. 5-oz.  balls from the meat mixture.

  4. Press each ball of meat into a patty.

  5. Place each of the patties onto the hot grids of the grill.  Cook on each side for 3 to 5 minutes until an instant-read thermometer shows you that the patty has reached the degree of wellness that you prefer (145 °F for beef rare, 160 °F for beef medium, 170 °F beef well).  Remove immediately and serve while hot.
