Flat Top Grilled Tomatoes
One of the very first things I grilled on my new flat top griddle was beefsteak tomato slices and they were absolutely delicious!
Tomatoes have long been known to be a good source of lycopene, the phytochemical which makes them red but which also has significant antioxidant properties. Recently, new research has shown that this antioxidant power can be boosted even more through the simple act of cooking the tomatoes. Cooked tomatoes are low in calories and fat and supply you with a good dose of protein and fiber. They're easy to incorporate into your healthy eating plan too.

Slice your tomato(es) thick, about 1/2 inch.

Squirt or spray your oil of choice (I use avocado oil) onto the griddle and place the tomato slices onto the oiled area.

Sprinkle the top side of each slice with your desired amount of basil, salt and pepper. Cook about 3 minutes, flip with a spatula and season again. After about 3 minutes char marks begin to develop and it is time to remove the slices from the griddle.

Optionally, if desired, you can top all or some of the slices (after the final flip over) with your favorite type of freshly grated cheese and allow it to melt.
