Grilled Marinated Chicken Thighs

Chicken thighs are healthy! While they do have more fat than chicken breast (which is why they are juicier and more flavorful), they are still an excellent, lean source of protein that deserves to be in your diet. And, chicken thighs contain more vitamins and minerals than chicken breasts.

If  you do move to the dark side, trim visible fat — and have a food thermometer handy, since the cooking time may be longer than a white-meat recipe indicates (with any cut, your meat should register 165°F when done). Also, remove any skin before eating — that's where the artery-clogging fat lurks.

I don't know if it is the marinade or the cooking method but when these thighs come off the flat top grill they are so juicy and tender that they almost melt in your mouth.

  1. Stir the marinade ingredients together in a large bowl.

  2. Add the chicken thighs, cover the bowl and refrigerate for at minimum of 4 hours and overnight is okay.

  3. Preheat your grill to medium high heat.

  4. Before grilling, remove the chicken from the marinade and drain off excess liquid.

  5. Grill chicken for 6 – 7 minutes per side, or until their internal temperature reaches 165˚F.
